Travis wanted pancakes and there was no mix in the house, so Lynn made a jar of dry pancake mix out of flour, baking powder, sugar, salt and baking soda. She then cooks a batch from it in her cast iron skillet to show it works the same as the boxed kind.
What Lynn shows you
- She mixes it in a four-cup measuring cup, but points out you can mix it straight in the mason jar you plan to store it in, as long as the jar is big enough to shake.
- The ratio she states for using it: one cup of mix to one cup of milk and one egg. She uses whole milk.
- Let the batter rest before it hits the pan - "you'll want it to sit for about 10 to 15 minutes before you start actually cooking your pancakes" if you have the time.
- Skillet on medium with a little butter, and she waits for bubbles to form and the edges to brown before flipping.
- At a 4-inch size she says the batch should make around ten pancakes, and that they freeze if you want to make them ahead.
