Lynn needed a can of sweetened condensed milk, didn't have one, and made a batch instead of driving to town. She cooks a sugar syrup on the stove, whips air into it with the whisk attachment on her stand mixer, then beats in powdered milk until it looks and pours like the canned kind.

  • The stove step is judged by eye, not a timer - she takes the syrup from cloudy to clear and stops when it has "a tiny tint of color to it," which took her somewhere around three to five minutes.
  • She warns twice that the syrup is boiling hot going into the mixer bowl, and to be careful pouring it.
  • A stand mixer isn't required. She says if you only have a regular hand blender, "use your regular little blender" - she's just using the KitchenAid because she has one.
